THAI YELLOW CURRY MIX

Fry chopped shallots, garlic, galangal & 1tspn of shrimp paste in a pan with a little oil. Add 1 tspn per person of spice mix, 1 can of coconut milk, kaffir lime leaves & a crushed stalk of lemon grass, meanwhile fry the chicken and then pour the sauce over, garnish with fresh coriander.
