MEXICAN MOLE SAUCE MIX

Roast 100g each of pumpkin seeds & mixed whole nuts. In a heavy saucepan sweat 1 apple, 5 tomatillos, garlic, onions. Now blend the2 together in a food processor, add 1 tspn of spice mix per person & bring back to a simmering point. Add a bit of stock if too dry.

Ingredients: Ancho, Mulatto, Cascabel Chilis, Cumin, Cloves, Oregano, Pepper, Cinnamon, Cocoa Powder
