MALAYSIAN CURRY MIX

Blend ginger, shallots, garlic, galangal, fresh curry leaves & 2 tspn tamarind paste. Add 2 tspn of curry spice and heat this paste up in a saucepan with a bit of oil. Add the chicken & cover with coconut milk or stock. Garnish with fresh coriander.
