LEMON MYRTLE

Of all the Australian spices this is my culinary favourite, as its aromatic lemonyness goes with almost any food. combines well with any spice.Use sparingly as it is 30 times higher in citral then a lemon. Also never cook it longer then 10-15 min to bring out the best flavour.
