Heat some oil in a karhai or a heavy based frying pan & fry onions, garlic, ginger until lightly brown. Add meat & fry until brown all over. Add 1 tspn of spice mix per person and fry for 1 min. Add tinned tomatoes or creamed coconut and bring slowly to the boil. Cover and cook for 1-2 hours.
