In a heavy casserole dish heat up some oil or ghee. Add crushed garlic, onions, ginger and brown. Add 1 tspn. of the spice mix per person, chopped tomatoes, 2 tblspn of clear vinegar, 1-2 tblspn of brown sugar or jaggery. Then add the meat and cover with stock, and simmer gently.
