GINGER ROOT PIECES, DEHYDRATED

This is the next best thing to substitude for fresh ginger.Just use one or two fingers put them in a cup and pour boiling water over it to cover.In about 20 min the ginger is hydrated and can be cut or grated just like fresh ginger. Also use the soaking water for extra flavour.
