POUDRE DE COLOMBO

Colombo is the name of a curry made on the French Carribean islands & is not as hot as Indian curry blends. To make a paste, fry onions, garlic, & ginger with oil, add 1 tspn. per prsn. of the spice mix, and cook for 2 min. Add meat, stock and either ground rice or almonds to thicken, cook till meat is tender, about 1.5 hours.

Ingredients: Cumin, Coriander, Fenugreek, Pepper, Cloves, Turmeric
