Iranian spicing tends to be mild, using sesame, saffron, cinnamon, rose petals, caraway and lime powder as their major spices.Use 1 tspn. per person and add to stews whilst slow cooking.Add loads of fresh herbs like parsley, coriander and dill at the last minute of cooking for a fresh flavour as well as a garnish.
