MOROCCAN CHICKEN SEASONING

Blend 4-5 tspn of spice mix with 2-3 tblspn of oil & the juice of 1 lemon. Rub the paste on the chicken skin & marinade for 2 hours. Stick 1 bunch of fresh mint & one whole lemon into the chicken cavity. Roast in the oven. Keep on basting the chicken with the juices to keep it moist.

 

Ingredients: Cardamom, cumin, coriander, fennel, rosematy, star anise, mace, allspice, caraway, celery, pepper, mustard, dill, ajowan, fenugreek seeds, nigella, juniper, cubebs, grains of paradise, aniseed, long pepper, cloves, poppy seeds, paprika, cinnamon, ginger, galangal, turmeric, paprika, chili, rosemary, lemon thyme
