Heat oil in a pan and sautee' onions, add laksa spices &cook for 2 min. Add coconut milk, stock and fish sauce, and simmer for 5 min. Then add chicken or prawns, bok choy or mushrooms of your choice. Divide rice noodles into bowls& ladle in Laksa, garnish with bean sprouts, mint and coriander.
