WEST INDIAN MASALA

This Masala blend was taken by the Hindu workers to Trinidad & Tobago and is medium to hot. Dry roast the spice mix for 1 min, then blend with onions, garlic, ginger to fine paste in a food processor. Add a little tamarind water or lemon juice, then add to curries or use as a paste for rubs on the BBQ.

 

Ingredients: Coriander, aniseed, cloves, cumin, fenugreek, turmeric, garlic, onion, chili, mustard seeds
