RENDANG CURRY MIX

Blend,shallots, garlic, galangal and 1 tspn.per person of the spice mix. Add 2-3 tblsp. Of coconut milk, Heat the paste in a wok and add meat, stir till the meat is well coated. Add the remainder of the coconut milk, 2 stalks of lemon grass, 1 tblspn. Of tamarind and 2 tblspn, of palm sugar. Let it simmer till most of the liquid has evaporated.
