JAFFNA CURRY SRI LANKAN

In a heavy casserole dish heat up some oil or ghee. Add crushed garlic, onions, ginger and brown. Add 1 tspn. of the spice mix per person, chopped tomatoes, 2 tblspn of clear vinegar, 1-2 tblspn of brown sugar or jaggery. Then add the meat and cover with stock, and simmer gently.

 

Ingredients: Fennel, mace, cloves, pepper, star anise, cardamom, cassia, cumin, coriander, cinnamon, mustard seeds, ginger, chilli
